The Story of the Chicken Taco Stuffed Peppers

I learned to cook from my mom, who was in the restaurant business for over 30 years, and one of her favorite things was stuffed peppers.

My mom recently visited and, of course, couldn’t wait to come into the restaurant and see what I was up to. 

  
After she left I couldn’t help but want to do something I could remember doing with her as a kid and young adult, and stuffed peppers came to mind. 



So I chose them for this week and they are super simple, which I think makes them great! It’s all natural chicken breast with is slow cooked and pulled, black beans, hatch green chiles, enchilada sauce, red onion, white corn chips and reduced fat cheese. The peppers are the labor of love in this dish.


My advice...
Dress em’ up!  I like to top mine off with plain Greek yogurt and nacho sliced jalapeños or avocado & sriracha. 
Have fun with your food and enjoy what you eat while making better/wise choices!

 

Remember, eating clean doesn’t mean not enjoying your food or having some flair.
